Executive chef Boris Bueno runs Bobo Food Studio - alongside his second restaurant Ibiza Food Studio on the popular Spanish island. Admittedly, chef Boris looks a bit like a hippy who belongs so much in Ibiza, but with an absolute Danish flair. He is also jokingly called 'Bobo', yet the restaurant is not named after him; the name refers to the Bourgeois-Bohème movement. These were bourgeois who fought for socialist values, which matches the image many people have of Danes: champagne-drinking socialists. At Bobo Food Studio, on the other hand, íveryone is welcome.

What is immediately noticeable upon entering is Boris' passion for the suit; if you talk to him about his business and work, the enthusiasm, knowledge and skill splashes out. And that is not surprising: after all, Boris has a CV you can say hello to. For four years, he stood at the cradle of the renowned restaurant Noma, which is invariably crowned with three Michellin stars. At Noma, where he worked with Rene Redzepi, he soon became known as "the greengrocer" because he knows a terrifying amount about vegetables. And not just about the produce itself, but if possible even more about the flavours. Boris knows better than anyone how to bring out the special flavours of everyday produce - you don't know what you taste. Boris, by the way, is who is the only one who deserves a mention: chef de cuisine Asgeir Jonsson and sous-chef Ignacio Urbisaglia are of the same calibre - including experience at Michelin-starred establishments in Copenhagen.

After leaving Noma, Boris travelled to London where he worked for Hakkassan and Maze. It started itching and packed his bags to settle in Ibiza. He opened a finca restaurant and still owns Ibiza Food Studio - a special place where, like at Bobo Food Studio, vegetables play the starring role.

Boris's approach is simple: he prefers to use as few ingredients as possible, makes everything himself and buys everything locally. There are few exceptions to these rules, but truffles, according to him, really have to come from the best region in Italy. The same goes for the cocktails; the cocktail experts use local and surprising ingredients that you wouldn't immediately combine in a drink yourself. White chocolate, passion fruit and mezcal? It turns out to be a surprisingly good combination.

Never a dull moment

It is clear that Boris has an unconventional way of working. His way of working is carried through to the last detail; not only in the dishes, but also in the way he dines. He himself finds it "boring" to sit at the same table for three hours; he likes experiences that excite. Therefore, a full experience starts with a dish and matching cocktail at the bar, after which you move to - yes - the kitchen. Here, the chefs cook the stars from heaven, right in front of you. A good glass of wine cannot be missed either, which is why you move on to the wine cellar for the next courses. The main course takes place for the first time in the restaurant itself, dessert in the lounge area. In short: Noma, eat your heart out.
